Japanese Pork Belly Recipe Instant Pot

Lightly season the other side of pork belly with salt. Stir gently to mix.

Put the pork belly back into the Instant Pot and add the sauce ingredients. Add soy sauce leek ginger water sake garlic and mirin. Cover with the lid and cook for 90 minutes on high pressure.

Close the lid of the instant pot and make sure you have your vent set so it is not venting. 2 -3 hours over the stove. Cook uncovered so unwanted smell goes away for 2-3 hours turning occasionally if you want really tender meat cook for at least 3 hours.

Line the baking sheet with foil or parchment paper before broiling the pork. Cover the pork belly with water and add the piece of ginger and the green onions. Cook for 5 minutes on the high pressure setting.

Add sesame oil stock soy sauce balsamic vinegar red pepper flakes agavehoney garlic ginger and mushrooms to the pot. Flip the meat back to skin side down in the Instant Pot or slow cooker. You will not need to increase the cooking time for the first part blanching the pork but for the simmering part I would increase the time a bit cook 15-20 mins to so that the flavor will go in more.

Drain the pork belly and add it back to the pot with all the other ingredients.
